DMT EdgeSharp SharpAdjust - 6-Angle Adjustable Sharpener

Most pull-through sharpeners force every knife to the same angle. This one lets you set it.

A dial on the base moves the abrasives through six positions from 14° to 24°, each marked with the knife type it suits:

• 24° — cleavers
• 22° — hunting and sport knives
• 20° — kitchen knives
• 18° — Japanese and European knives
• 16° — paring and fillet knives
• 14° — hobby blades

That matters more than it sounds. Sharpening a Japanese gyuto at a cleaver angle throws away most of what you paid for, and putting a fillet-knife edge on a hunting knife gives you something that chips on the first bone. Matching the factory geometry is the difference between maintaining a knife and slowly ruining it.

Twist to lock the head for use or release it for storage. Non-slip base holds the unit steady with one hand while you draw the blade through.
