Lansky's Quick Edge — compact, inexpensive, and effective on everything from kitchen knives to a working pocket knife.
A closed loop body you grip in one hand while drawing the blade through with the other. The sharpener sets the angle for you, so there is nothing to learn and no way to put a bad bevel on a knife by accident.
The ring keeps your fingers well clear of the edge, and the moulded finger scallops give a solid hold even with wet hands. Black, unobtrusive, cheap enough to keep one in the kitchen and one in the bakkie.
