Opinel
Opinel has made its folding knife in the Savoie region of France since 1890. A plain beechwood handle, a slim carbon steel blade that takes a keen edge, and the Virobloc rotating collar that locks the blade open or closed.
Carbon steel can pick up a patina or rust if it is left wet, so wipe the blade dry after use and add a drop of oil now and then. Treated that way, an Opinel lasts for decades.
